Birthday Vanilla & Raspberry Cake Celebrations

A birthday deserves a proper cake that most importantly tastes good and not overly sweet. This is the one I make for the friends whether it be for 40th birthday celebrations or childrens communion or confirmation. Its a light vanilla sponge, layered with my homemade raspberry jam and finished with a silky vanilla meringue buttercream or cream if you prefer. It's the same jam that goes into my shortbread hearts, so if you've had one of those, you'll know.

It's not too sweet and not too heavy, the kind of cake people come back for a second slice of. Every cake is baked to order in my kitchen in Cork, decorated simply with fresh seasonable fruit of your choosing.
