In November 2023, Shelly’s launched a special fundraiser, a Palestinian-inspired treat box to support Medical Aid for Palestine. Featuring handmade coconut and orange macaroons, chocolate and tahini brownies, and rosewater shortbread, the box was a heartfelt tribute to Palestinian flavors.

This initiative held deep personal meaning for me. In August 2023, just months before the tragic escalation in Gaza, I spent three weeks in Aida Refugee Camp in Bethlehem. The experience witnessing life under occupation moved me profoundly to launch this fundraiser.

During my time in Palestine, I witnessed the difficult realities of life under occupation. Access to basic necessities is restricted, and even something as fundamental as what food one eats is controlled by the occupied forces. Yet amidst these challenges, I saw incredible resilience and creativity — like the rooftop garden at the Lajee Centre in Aida. Despite the cramped conditons in the refugee camp, this garden was a clever solution, allowing residents to grow fresh fruit and vegetables.

 In just one week, over 100 boxes were sold, turning it into a whirlwind of baking for just one person! Thanks to the incredible support, Shelly’s was able to donate €2,455 in profits to Medical Aid for Palestine.
